The general objective of this course is to understand the main characteristics of foods and changes undergone by culinary processes.
- Provide the student with knowledge that makes him able to plan and execute culinary preparations taking into account the changes suffered by food and the organoleptic characteristics of the final product, whether intended for the common consumer or for those who need special care;
- Make the student aware of the need to implement the concept of traditional cuisine associated with the Mediterranean Diet, using healthy cooking techniques;
Duration: 17.5 hours total, spread over five sessions, in person.
